Shortbread

While looking through Retro Mummy's blog recently, I came across a recipe for Cranberry and Pistachio Shortbread using the Thermomix (she also has non-Thermomix instructions too).  Being a lover of shortbread and nuts, I have been itching to try it!  So, yesterday I had a little time up my sleeve and whipped some up.  I didn't have any craisins, so used sultana's instead and it turned out SO yummy!  And SO quick to make!

 

 

My Nan used to make the best shortbread. Every year for Christmas she would do a ton of baking and give everyone a big plate full of a mixture of sweet treats! When she made the shortbread, she used to pile jam on top and a decent layer of cream! It was to die for! I really miss that! But lucky for me, I do have a good selection of Nan's recipes.
